Sweet Potato Medallions with Almond Sauce and Chickpea Salad
 
Serving size: 1 1/2 cup salad, about 3 sweet potato medallions, and about 1 1/2 tbsp. sauce
INGREDIENTS
  • 4 small (4-oz.) sweet potatoes
  • 1/4 cup creamy natural almond butter
  • 3 1/2 tablespoons warm water
  • 3 tablespoons fresh lemon juice, divided
  • 2 tablespoons olive oil, divided
  • 1 (15-oz.) can unsalted chickpeas, rinsed and drained
  • 5 ounces baby arugula
  • 3/4 teaspoon kosher salt
  • 1 teaspoon black pepper
PREPARATION
  1. Prick potatoes all over with a fork; place on a microwave-safe plate, and microwave at HIGH just until tender, about 5 minutes. Cut into 1/2-inch-thick rounds.
  2. Whisk together almond butter, water, and 1 tablespoon lemon juice in a bowl. Set aside.
  3. Brush potato slices on 1 side with 1 tablespoon oil. Heat a large skillet over medium-high. Working in batches, cook potato slices, oil side down, until golden brown, 2 to 3 minutes.
  4. Combine chickpeas, arugula, salt, pepper, remaining 2 tablespoons juice, and 1 tablespoon oil in a large bowl. Divide chickpea mixture among 4 plates; top with sweet potato slices. Drizzle with almond butter sauce.

1. What was I doing before OTF?
Other than walking the dog, doing yard work and playing golf I did no exercise at all.
2. What made me decide on trying OTF?
I saw the new gym open on the Westshore and decided to check it out on line. Liked what I saw and read and after talking to some friends on the mainland who are members over there   thought this might be just what I was looking for and needed.
3. How did I feel when I first started OTF?  
Fat, lazy, and out of shape
4. How do I feel today at OTF?  
I have so much more energy now. Am not near as stressed and have the capacity to do all the things in a day that need to be done and not put off until tomorrow.
5. What improvements have I experienced since joining OTF?
The way I look and feel about myself and my overall physical condition. Improvements in my strength, flexibility and endurance have greatly approved since joining. Looking so forward to how far I can go and the impact of continuous improvements in all these areas.

6. Who have you inspired through OTF?
My wife (even though she hasn’t join OTF yet!!) she still has joined a ladies only gym and really is enjoy it. I think once she feels better about herself I might get her to at least try a few classes
7. What do you LOVE about OTF?  

 I love the leadership and encouragement that all the staff provide. Love the de-stressing factor during and after a workout and that I don’t stress as much during the day. Love that every workout is different and that the staff makes sure you are doing the exercises right and they know when they can push you just that little bit more.  Most of I all I just love how I feel and am getting back to a more fit me. Oh and I still love the butter flies in my belly not knowing what the workout is going to be when you show up for a class.

The Mustard Seed is a wonderful organization in Victoria that helps individuals and families living in poverty in Greater Victoria and they have been doing so since 1975. They are nearly 100% community funded and include Vancouver Island’s largest food bank, a family center, hospitality programs and addictions recovery. They positively impact on average, 5,000 individuals per month and have lots of wonderful volunteers that keep things running.

Thank you again to our wonderful members for making the 6-week challenge a success and congratulations to Val on winning the $1,500 trip voucher!
